Chickpea casserole

(About 1.5 liters)

Ingredients:

  • 2 chopped onions
  • 2 pressed garlic cloves
  • 1 chopped red bell pepper
  • 300 ml chopped tomatoes or 1 can of crushed tomatoes
  • 1 diced potato
  • 300 ml diced squash or cucumber
  • 100 ml shredded carrots
  • ½ chopped apple
  • 50 ml of raisins
  • 1 tbsp homemade curry
  • 2 tablespoons olive oil
  • 2-3 pinches of paprika powder (½ tea spoon)
  • Ca 2 ½ tsp salt (try how much)
  • 50 ml tomato paste
  • 50 ml peanut butter
  • 400 ml of cooked chickpeas
  • 250-300 ml of water
  • 200-300 ml of coconut milk
  • 2 teaspoons honey
  • ½ tablespoon soy sauce
  • 1 tablespoon lemon juice

 

Directions:

Fry the first ten ingredients in the oil. Add water, peanut butter, paprika, tomato paste, chick peas and salt. Cook until the vegetables are soft. Then add coconut milk, honey, soy sauce and lemon after taste. Cook another 3-4 minutes. Serve with rice or pasta.
